The Echlinville Distillery
In the heartland of the Ards Peninsula near Belfast lies a distillery that is as unique in both its ambition and in the techniques it employs.
The 300 acre Echlinville Estate dates back to the 16th century and is home to both our distillery and the fields whence the grain was grown and harvested.
In true Irish fashion we use this homegrown grain to distill, distill, distill our own spirit in copper pot stills.
The gin journey is completed with the addition and balancing of 10 carefully selected botanicals, 3 of which are vapour infused for optimal flavour. We might be surrounded by history but our focus is firmly on making it.
True Character
Distilled very slowly in a tradition copper pot still for the best quality spirit and maximum influence from the botanicals after they have steeped overnight in the warmed spirit. While most of the botanicals are 'steep and boil', 3 of the botanicals use the vapour extraction method to preserve their delicate flavour and aroma.
The Nose:Ā Big, bold juniper and pine notes balanced with coriander and clean citrus.
The Palate :Ā Classic gin that becomes more complex on the palate. Starts with citrus and juniper developing into pepper, green angelica and subtle rootiness
The Finish :Ā Citrus with lingering juniper and pine with the quiet complexity of the supporting cast
